Trends in Water Technology
As local governments grapple with issues of clean drinking water, new technologies and processes have emerged. Electrolyzed drinking water (E-Water) has been found to be effective in eliminating food-borne zoonoses.
E-water produced using the electric current is a weak solution of water and salt, which produces superacidic,”clean”drinking water, which contains strong oxidizers, even if it doesn’t look, smell or taste different from tap water. It can be used in hand washing and food contact surfaces, to clean cutting boards, dishes and more, to clean up the raw food, simply because its bacteria killer.

E-Water is particularly easy to use, simply because it doesn’t leave soap residue in food contact surfaces, doesn’t need to be rinsed off, and works well on floors and stainless steel surfaces. Grease exhaust hood filters can be soaked in it overnight. Experiments less detergent needed for the E-water was used in dish machines.
Devices to produce electrolyzed water is now available in the food service sector, but the technology has not yet become a cost-effective enough for the house.
